Pasta:
½ package Lumache Rigate (227gr)
salt
water
1Tbsp Olive oil
Ingredients:
2Tbsp Grapeseed oil
125 grams Nduja Sausage (pulled intro small morsels)
¼ cup chopped garlic
1Lb chopped red prawns (rough NOT Ground)
½ cup white wine
1-1 ½ cup chicken stock
3-4 Tbsp unsalted butter (tiny cubes or softened)
1 Tbsp Lemon Juice
1 Tbsp Chinese Red Vinegar
Garnish
Plucked Italian parsley
Pickled Hungarian Hot Peppers (recipe at end) or store bought banana peppers is cool.
Cold pickled Hungarian Hot Peppers
Part A: In a pot boil…
1 bay leaf
125ml rice wine vinegar
125ml plain white vinegar
80ml sugar
30ml Kosher salt
500ml water
Allow to cool overnight….
Part B: In a jar or pyrex container…
1Lb Fresno Chilies sliced ¼ inch thick
1/4Lb Fresno chilies sliced ¼ inch thick
3 cloves Garlic finely slivered
Pour chilled liquid over chilies and garlic and cover. At least 1 day before using. But worth the effort.
If extra liquid keep to make more!
